Below is a chicken with rice recipe that I thought I could share with you all as it is honestly super easy to make and takes 30 mins to make! 😋
You need to cut the breast chicken up into small pieces, add salt, pepper, and 1 teaspoon of paprika to it before you cook it in oil in a deep pan on medium-high heat. Cook until it is golden brown.
Remember to flip the chicken – with the goal of golden-brown colour on each side.
Next, wash your rice until the water is clear and then cook in a rice cooker or in a pan until it’s ready. (To determine if the rice is cooked, taste it, and see what you think about the texture).
Once the rice is cooked, leave it to the side and cut one onion and a clove of garlic and add it to a pan with olive oil, let it go golden brown then add salt, pepper and then add your kidney beans.
Once you let that cook for a minute or two- add the rice and finish it with lime juice (do it according to your preferences) and then add mint leaves to it.
Then cut your cucumber and tomato into pieces, and add your lemon-olive oil-salt-and-pepper-vinaigrette to it.
Now you’re ready to serve. 🙂
